What to tag?

We'd like to effectively use tagging in COR. We started off with implementing the ability to tag products and categories. In fact we decided to break the usual paradigm of a product belonging to multiple categories. Instead a product can belong to only one category. However by having the products tagged we can enable the visitor to browse products by tag instead of using just the category structure.

For instance a product like Bluetooth Headset XYZ may belong to the category /Cell Phones/Accessories, however we may want to give the user the ability to view all products from the manufacturer XYZ. This can be easily accomplished if each of the manufacturer's products is tagged with its name.

The use of category tags is not so clear. There is little value in searching for categories by tags. Oto suggested the other day that categories with assigned tags should simply show the products that match the tags specified for the category. I think this is a neat way of mixing up regular categories and tagged categories.

Any suggestion on how to use tagging effectively in COR?
